Dates Cookies Recipe

Ingredients

for the dough:

2 cups butter or 400 g, softened

5 cups plain flour or 700 g

1 teaspoon lemon zest, grated

1½ cups icing sugar or 200 g

4 egg yolks

for the filling:

1½ cups date paste or 300 g

1 tin NESTLÉ® Cream or 170 g

2½ cups ground almonds or 250 g


Preparation

Mix the soft butter with the flour using your hands until the mixture is homogenous.

Make a hole in the middle of the dry mixture. Add lemon zest, icing sugar and egg yolks. Use your fingertips to mix the ingredients together.

Mix the dough well until it can be formed into ball then knead it lightly pressing with hands until it is smooth. Divide into 2 equals balls, cover and chill for at least ½ hour or until almost firm.

Meanwhile, combine in a bowl the date paste, NESTLÉ® Cream and ground almond and mix well until well combined.

Generously sprinkle flour over the first dough and place it between two sheets of greaseproof paper. Gently roll it between the papers to get 3mm thick dough. Repeat the same process for the second dough.

Place the first one over a large tray keeping greaseproof paper below and removing the upper one. Spread and press the date mixture evenly all over the rolled dough.

Turn the second rolled dough over the date paste mixture by removing the upper paper and keeping the below one to ease turning the dough over the date paste mixture. Press gently and place in the freezer for few hours until it freezes.

Slice out bite shapes using a sharp knife, place cookies 1cm apart on greased large baking tray. Keep aside to defrost and bake in a 200˚C preheated oven for 20-25 minutes or until top becomes light brown.

Remove from oven and set aside to cool.

Cooking tips :     Brush the top with beaten eggs and sprinkle with slightly toasted sesame seeds before baking.

Move over cakes and puddings, baklava is here! Baklava, an Arabic pastry, is packed with dry fruits and nuts between layers of phyllo pastry. You might find our baklava recipes a bit too sweet but its amazing flavours will hardly keep you complaining.

A single bite on this Arabic pastry and you will pop a few into your mouth without much ado. The buttery crust and the nuts like pistachios and walnuts add a nice crunch to the dessert while a hint of cinnamon creates magic with the dried fruits.

To cut down the dryness, baklava is often served with thick syrup made of honey, sugar and water which is much less sweet than the baklava itself but adds to its amazing flavours.

Every oriental culture claim their share of fame as the inventor of baklava but its original roots still remains a dispute. Most believe that it is of Turkish origin and was given its contemporary form by the royal cooks of topkapi palace.

Different Middle Eastern countries love to relish their baklava in their own way. While the Turkish prefer their baklava loaded with pistachios, the people of Iran love it dried with a trace of rosy flavour.

Introduce your kids with the Middle Eastern flavors through a baklava and amaze them with its delightful flavours. If you think that making baklava is a laborious process, follow this authentic baklava recipe and you will be cooking it like a professional.

Ingredients

 
16 oz phyllo dough
1 cup butter
1 lb chopped nuts (walnuts, pistachios, cashew nuts)
1 cup white sugar
½ cup honey
1 tsp vanilla extract
1 cup water

Method

 
1. Warm your oven to 350 degrees F.
2. Grease a fairly large baking dish with butter and keep aside.
3. Sprinkle cinnamon on top of chopped nuts and toss well to mix.
4. Roll out the phyllo dough and cut it into half.
5. Spread out two dough sheets in the dish and butter; continue the process until you get 8 layers of phyllo dough sheets in your dish.
6. Spoon in some of the spiced nuts and spread evenly throughout the sheets.
7. Cover them with 2 more sheets, coat it with butter and top the sheets with another layer of nut mixture.
8. Continue the layering and until you have covered 2/3 rd of the depth of baking dish.
9. Top the layers up with final 6 phyllo sheets.
10. Cut it out in small squares with a sharp knife.
11. Bake for 50 minutes until the crust turns crisp and golden.
12. Meanwhile, to make the sauce, melt sugar in water over heat.
13. Pour in honey and vanilla and let it simmer for half an hour.
14. When your baklava is done, take it out of the oven, smother it with the sauce and serve.

Sesame Halva Recipe

Sesame halva is an indulgence for our sweet tooth straight from the heart of the Orient. Halva is a dense brick like confection which can be made from a number of ingredients like beans, nuts vegetables and sunflower seeds.

Sesame halva is one such edition among the wide range of halvas worldwide. Sesame halva is a much loved sweet among the inhabitants of Balkans, Middle East and Poland. Apart from sesame or tahini paste, this oriental delight gets its share of subtle sweetness from the brown sugar and honey.

Additional elements like pistachios, chocolate, fruit juice or vanilla turns it into an extravagant treat for our palate. Some versions have marshmallow roots and egg whites in them which impart a unique taste to sesame halva.

If you are planning to prepare sesame halve for your kid, don’t forget to add some nuts and chocolate in it. They will simply love the rich chocolaty flavors complimented by the playful crunch of the nuts. The best part of making sesame halva is that you can make loads of in one go, then store it in the freeze and pop a piece of into your mouth whenever your heart craves for something sweet. So prepare sesame halva and let its flavors excite you!

Ingredients


2/3 cup tahini (sesame paste)
2/3 cup milk
2 cup brown sugar
1 tsp cocoa powder
1 tsp vanilla extract
¼ cup chopped nuts (pistachios and almonds)

Method

 
1. Boil a mixture of milk and sugar in a pan over medium heat until it reaches the soft-ball phase. 

2. Turn off the heat and add the remaining ingredients.
3. Don’t stir the mixture and leave it just like that for a couple of minutes.
4. Now whisk the mixture briefly and pour it into a previously greased mould.
5. Allow it to set before cutting it into pieces and taking pleasure in the lip-smacking sesame halva.

Ingredients

3 cups tea biscuits or 300 g, crumbled

1 tin NESTLÉ® Sweetened Condensed Milk or 397 g

½ cup butter or 100 g, melted

1 teaspoon vanilla essence

½ cup pistachio nuts or 75 g, chopped

½ cup tea biscuits or 50 g, additional quantity, crumbled

Preparation

Combine all ingredients in a bowl and mix well except the extra crumbled biscuits.

Form the mixture into small balls, and then roll into the extra crumbled biscuits.

Allow to cool in fridge and serve.

Ingredients

1 tin NESTLÉ® Sweetened Condensed Milk or 397 g

1½ cups dried dates or 300 g, pitted and chopped

1 cup water or 250 ml

¼ teaspoon baking soda

½ cup butter or 100 g, chopped

1/3 cup caster sugar or 70 g

2 eggs, kept at room temperature

1¼ cups white self-raising flour or 175 g

2 teaspoons vanilla powder

Preparation

Place NESTLÉ® Sweetened Condensed Milk , dates and water in a large sauce pan. Bring to boil and cook on low heat stirring for 2-3 minutes. Remove from heat and stir in the baking soda. The mixture will become like foam, and then set aside to cool.

In another bowl, mix the butter and sugar until creamy. Add the eggs one at a time, beating well after each addition.

Gently mix in the flour and vanilla powder, and then stir in the date mixture.

Pour the mixture into a buttered and floured baking tin. Bake in a 175°C preheated oven for 40-45 minutes or until a skewer inserted in the middle comes out clean.

Lebanese Knafeh Recipe

Ingredients:

1 package of shredded Kataifi dough
1 cup of butter melted
1 tablespoon melted Ghee
2 ½ cups of Akawi cheese
1/2 cup unsalted pistachio coarsely chopped
2 1/4 cups of milk
½ cup of Semolina (fine)
1 tablespoon of Rose water

Syrup:

3 cups sugar
1 ½ cups of water
1 teaspoon of fresh lemon juice
2 teaspoon of rose water

Preparation:

Thinly slice the cheese into patties and soak in water for an hour changing the water at least twice to remove salt.

Next is to defrost the Kataifi dough. Remove from bag, and chop the log into 1 inch treads.

In a sauce pan, make syrup (add sugar, water, lemon juice and rose water) and bring to a boil for 7-10 minutes. Then heat down to low and keep warm.

In a large bowl, shred the dough to make sure you have no clumps. Then add the melted butter and ghee while continuously shredding the dough and making sure it’s competently incorporated.

When this process is complete and the dough coated well with the butter and ghee, separate the dough into two equal portions.

In a pan ( 30*20cm), spread out the dough thoroughly, and gently press down.

Remove cheese from water and pat dry on paper towel.

In a sauce pan, cook the milk, semolina and rose water until thickened. Pour over the pressed dough in the tray and spread evenly ovoid touching the edges of the tray.

Lay the cheese patties onto the semolina spread. Lay the second half of the dough onto the cheese so that it is evenly distributed. Gently press down making it even all over.

Preheat the oven to 350 degrees, then place the pan in the middle for roughly 45 minutes. With a butter knife check the side to make sure bottom is browning.

Once golden brown on both sides, remove from oven then sprinkle with pistachio’s and then spoon half the sugar syrup over the Knafeh.

Serve warm with a spoonful of syrup over it. Once cooled you can reheated it in microwave for 30-40 seconds a slice and then pour some syrup over it.

One Arabic dessert I could never tire of would be the ever so popular namoura. This cake is extremely easy to make and requires very little ingredients so even the kitchen newbie will get it perfect anytime. After moving to Saudi I was taught that tahine is a better choice in coating the pans than the usual butter and oil many people use. Tahine is by far the Arabs choice when baking sweets.

Ingredients:
  
1-3/4 cups yogurt
2 cups semolina
1/2 cup sugar
2 tablespoons rose water
2 teaspoons baking powder
4 tablespoons tahine
slivered almonds to garnish
Sugar syrup for topping
 

Preparation:
 
1. In a large bowl add yogurt, semolina, sugar, rose water and baking powder. Mix well. In an 8×8 dish add tahine. Brush all over the bottom and sides of pan. Carefully pour the batter into the pan and smooth the top. Cut into squares or lozenges then press an almond into the middle of each piece. Leave aside to rest for at least one hour.

2. Pre-heat oven to 375F and allow to bake 30-40 minutes or until cake is golden. Remove from the oven and carefully pour syrup on top and all to soak for at least 2o minutes.

Yields: 10 servings

Ingredients

1    Teaspoon active dry yeast
1    Cup lukewarm water
1    Tablespoon sugar
¼    Teaspoon saffron
½    Cup soft butter
41/2 Cups flour
¼    Teaspoon salt
½    Teaspoon cinnamon
1     Egg
2    Tablespoons orange spirit
1    Tablespoon vinegar
Oil for deep frying
Syrup

For the filling:-

Date paste
Marzipan paste
Chopped pistachio with orange blossom water
Sesame or pistachio or almond slices for garnishing

Method

-Blend yeast in lukewarm water and a pinch of sugar, set to foam.

-Blend saffron in small amount of hot water, and set aside to color and saturate the water with its taste.

-Whisk butter, add sugar, beat until creamy.

-Mix flour with cinnamon and salt and add to batter, beat until well combined.

-Add both yeast and saffron mixture to the batter along with eggs.

-Dilute the orange blossom water and vinegar with the remaining amount of water, gradually add to the dough, knead until soft dough is obtained.

-Cover the dough and let rise for ½ an hour.

-Divide the dough. Roll on floured surface into thin dough.

-Mash the date paste to soften, then shape into a long, thin cylinder, do the same thing with the marzipan.

-Fill the dough either with the date or marzipan cylinder or the chopped pistachio, roll to form a cylinder.

-Cut the cylinder into equal slices.

-Deep fry the Makroud slices until golden brown from all sides. remove from oil transfer into syrup , then drip the excess syrup.

-Garnish as desired with sesame, chopped pistachio or almond slices.

Ingredients


2 x 350g tubs Greek-style rice pudding
1/2 cup (125ml) thickened cream
2 tbs rosewater
1/2 tsp ground cardamom seeds
200g rose petal jam
2 tbs slivered pistachios, to garnish

Method


Heat the rice and cream gently in a saucepan over medium-low heat. Stir in the rosewater and cardamom. Warm the jam in the microwave or in a small saucepan over low heat. Divide rice among 4 warm bowls. Garnish with nuts and serve with warm rose petal jam.

Halawet El-Riz Recipe

Ingredients

400 g akawi cheese, Czech

1¼ cups egyptian rice or 250 g

3 cups water

1 cup sugar or 200 g

½ cup rose water

for the cream:

1 tin NESTLÉ® Sweetened Condensed Milk or 397 g

3 cups water

¾ cup corn flour or 100 g

2 tablespoons rose water

Preparation

Slice the cheese and soak it in water at room temperature for 3 hours to remove the salt. Change the water every 10-15 minutes.

Boil the rice with the 3 cups of water until it is completely cooked. Add the sugar and rose water and blend using electrical blender.

Put the cheese in a bowl and melt it on double boil (bain-marie). Boil the rice mixture again and add the melted cheese to it while on fire, mixing constantly until well combined.

To prepare the cream, mix all the cream ingredients and bring to boil on low heat, and then simmer for 1 minute, stirring constantly. Keep aside to cool down.

Put the cheese mixture in individual cups or a large plate. Serve cold with the cream on top.

Barazeq Recipe

Ingredients

1 kg plain flour

1¼ cups semolina or 230 g

1 tin NESTLÉ® Sweetened Condensed Milk or 397 g

1½ cups sugar or 340 g

750 g ghee

230 ml water

1 teaspoon yeast

½ teaspoon ground mahlab

2 tablespoons butter

75 ml sugar syrup

2½ cups toasted sesame seeds or 400 g

300 g pistachio nuts, crushed

Preparation

Combine the flour, semolina, NESTLÉ® Sweetened Condensed Milk , sugar, ghee, water, yeast and mahlab making soft dough and keep aside for 10 minutes. Melt the butter, mix it with the sugar syrup and pour them over the sesame.

Make small balls with the dough. Press each ball gently to make a 4cm-circle. Dip one side in the crushed pistachio, turn and dip the other side in the sesame.

Bake them using a non-stick tray at 200 °C for 8 to 10 minutes or until golden in color.

Light Basbousa with Almond Recipe

Ingredients

½ cup butter or 100 g, melted

1 tin nestlé fat free sweetened condensed milk or 405 g

¾ teaspoon baking powder

2 cups semolina or 320 g

1 cup ground almonds or 100 g

1 cup water or 250 ml

for the syrup:

½ cup sugar or 100 g

1 cup water or 250 ml

1 teaspoon lemon juice

1 tablespoon cornstarch, (to thicken the syrup)

½ cup water, (cold, to mix with cornstarch)

1 tablespoon ground almonds

1 tablespoon rose water


Preparation

Combine butter, NESTLÉ Fat-Free Sweetened Condensed Milk and baking powder and stir well. Add semolina, ground almond and water and stir until well combined.

Pour and level mixture into 28cm x 24cm baking tin. Bake in a 190°C preheated oven for 35 minutes or until top is golden.

Remove from oven and allow cooling to room temperature. Cut into diamond shapes and pour all over the cooled syrup. Place in fridge to cool completely and then serve.

To prepare the syrup: Add sugar and 1 cup of water to a saucepan. Bring to boil and simmer for 6-8 minutes. Dissolve the 1 tablespoon of cornstarch in the remaining ½ cup of cold water and add to the simmering sugar and water, stir constantly on heat for 2 min until syrup thickens. Remove from heat and stir in lemon juice, rosewater and ground almond.

Date stuffed semolina cookies (Ma'amoul) recipe

Ingredients

Date Filling
2 cups soft pitted dates, chopped
3 tablespoons vegetable oil
2 tablespoons sesame seeds
½ teaspoon ground cinnamon or cardamom
Nut Filling
2 cups ground walnuts or pistachios
¾ cup sugar
¼ cup rose water
Ma’amoul
1 cup butter
½ cup milk
1 cup all-purpose flour
2 cups fine semolina flour
¼ cup sugar
2 tablespoons orange blossom water
Icing sugar, for serving (optional)

Method

- Mix dates, oil, sesame seeds, and cinnamon or cardamom to a paste. Shape into small balls the size of hazelnuts.
Nuts Filling
- Mix walnuts or pistachios with sugar and rose water.
Fillings can be made right before shaping and baking the dough.
Ma’amoul
- In a saucepan over medium heat, bring butter and milk to a boil. Mix all-purpose flour, semolina flour, and sugar in a large bowl. Pour hot milk mixture into flour mixture all at once, beating constantly with a wooden spoon until cool. Using your fingertips, rub in orange blossom water until fully incorporated.
- Cover with kitchen towel and let set for at least 3 hours (or preferably overnight).
- Preheat oven to 180˚C (350˚F).
- Knead dough by hand for 5 minutes until soft and pliable. Shape dough into walnut-size balls. Press thumb into balls to make cups. Fill cups with balls of date or a generous teaspoon of nut filling. Mold dough over filling, pressing seams to seal. Roll into balls. If desired, press balls into decorated molds, tapping them out onto a work surface. Arrange on a baking sheet.
- Bake on middle rack of oven for 25 minutes, or until golden.
- Let cool, then arrange on a serving plate. Sprinkle with icing sugar before serving, if desire

Almond Sweet Sambousek Recipe

Ingredients

for the dough:

1½ cups plain flour or 210 g

1 tablespoon sugar

1 teaspoon salt

½ teaspoon ground mahlab

½ cup butter or 100 g, softened

½ cup water or 125 ml

for the stuffing:

1 tin NESTLÉ® Sweetened Condensed Milk or 397 g

1 tablespoon corn flour

1 cup ground almonds or 100 g

½ cup pine seeds or 50 g, ground

½ teaspoon ground cinnamon

1 tablespoon rose water

1 cup sugar syrup or 250 ml

2 cups oil for deep frying

Preparation

Place flour in a deep bowl, add sugar, salt, Mahlab and mix well. Add butter then rub the butter with your fingertips until it resembles fine breadcrumbs.

Gradually add little quantities of water and mix thoroughly until a dough forms. Cover with kitchen cloth and set aside for 1 hour.

To prepare the stuffing, place NESTLÉ® Sweetened Condensed Milk and corn flour in a saucepan. Bring to boil under constant stirring and cook for 3-4 minutes or until the sauce thickens slightly. Remove from heat and set aside.

Add ground almond, pine seeds, cinnamon powder and rosewater to the mixture. Stir well and set aside to cool.

Roll the dough into round 3 millimeters thick pastry. Using a medium size cup, cut round pieces of the dough. Place 1 full teaspoon of the almond mixture in the center of each piece and seal the edges by twisting them.

Deep-fry the sweet sambousek in 180°C preheated oil for 5-7 minutes or until golden brown. Carefully remove the almond sambousek from the oil and immediately dip them in the syrup. Serve cold.

Pistachio Cake Recipe - How to Make Pistachio Cake

If you are using salted pistachios, omit the 1/4 teaspoon salt in the ingredient list.

yield: Makes 1 (13- by 9-inch) cake

Ingredients:

3/4 cup shelled natural pistachios (4 ounces)
1 cup all-purpose flour
2 teaspoons baking powder
1 teaspoon ground cardamom
1/4 teaspoon salt
1/2 cup whole milk
1/4 teaspoon vanilla
1 1/2 sticks (3/4 cup) unsalted butter, softened
1 cup sugar
3 large eggs

Preparation:

Preheat oven to 350°F. Butter a 13- by 9-inch metal cake pan, then line bottom with wax paper. Butter paper and dust pan with some flour, knocking out excess.

Pulse pistachios in a food processor until finely ground (be careful not to overprocess into a paste). Add 1 cup flour, baking powder, cardamom, and salt and pulse once or twice to mix.

Combine milk and vanilla in a measuring cup.

Beat together butter and sugar in a large bowl with an electric mixer until pale and fluffy. Add eggs 1 at a time, beating well after each addition. Alternately add pistachio flour and milk in batches, beginning and ending with flour, and mix at low speed until just combined.

Spread batter evenly in cake pan and bake in middle of oven until a tester comes out clean, about 20 minutes. Cool in pan on a rack 10 minutes, then run a thin knife around sides of cake and invert onto rack. Remove paper and reinvert cake onto a platter. Cut into squares and serve warm or at room temperature.

Cooks' note: Cake can be made 1 day ahead. Cool completely and keep, covered, at room temperature.

Middle-Eastern baklava recipe

Makes 3 long logs

Ingredients

500g good-quality Turkish delight*
50g almond meal
200g walnuts, finely chopped
2 tsp rosewater
1 tbs lemon juice
1 cup caster sugar
9 sheets filo pastry
100g butter, melted
Rose petals, to garnish
Turkish coffee, to serve

Method

Preheat oven to 190°C.

Cut the Turkish delight into small cubes and place in a bowl with the icing sugar from the box, the almond meal, walnuts, half the rosewater, the lemon juice and half the caster sugar. Stir to combine, then set aside.

Place the remaining caster sugar and 1 cup water in a saucepan over medium heat, stirring to dissolve the sugar. Decrease heat to low and simmer for 5 minutes. Stir in the remaining rosewater and set aside to cool.

Place 1 sheet of filo on a workbench and brush with butter. Repeat with 2 more sheets. Place a third of the filling along a long end of the buttered pastry, then roll up, twisting the ends to enclose. Brush the top with butter. Repeat with remaining filo and filling to make 3 rolls.

Place on a greased baking tray and bake for 30 minutes. Brush with a little syrup and set aside to cool.

Once cool, slice diagonally and drizzle with the extra syrup. Garnish with the rose petals and serve with Turkish coffee.

Easy Chocolate Truffles Recipe

Ingredients

1/2 cup plus 2 tablespoons heavy cream
1/8 teaspoon ground cardamom
Five strips 1-inch-wide orange peel, pith removed
8 ounces semisweet chocolate, finely chopped
1/4 cup confectioners' sugar
1/4 cup sifted cocoa powder
1/2 cup finely chopped assorted nuts, such as walnuts, pecans, and pistachios

Directions

In a small saucepan, whisk together cream and cardamom. Add orange peel; bring just to a boil. Remove from heat; let stand 15 minutes. Line a baking pan with parchment; set it and another pan aside.
 

Return cream mixture to heat; bring to a boil. Place chocolate in a heat-proof bowl. Remove cream mixture from heat. Pour through a sieve set over chocolate; discard solids. Stir until melted and smooth.
 

Pour chocolate mixture onto the unlined baking pan, and spread in an even layer with an offset spatula. Transfer baking pan to freezer; chill chocolate until hardened but malleable, 15 to 20 minutes.
 

Using a tablespoon, scrape enough chocolate from pan to form a roughly shaped 1-inch ball, being careful not to press too hard against baking pan. Repeat. Transfer balls to the parchment-lined pan; chill truffles in the refrigerator 10 minutes.
Place the confectioners' sugar, the cocoa powder, and the chopped nuts in three separate bowls. Roll the truffles in desired coatings.

Ingredients

1 tin NESTLÉ® Sweetened Condensed Milk or 397 g, chilled

3 cups whipping cream or 750 ml, liquid, chilled

1½ teaspoons vanilla powder

1½ cups toasted almonds or 225 g, chopped

1 cup pistachio nuts or 100 g, ground

1 cup dried dates or 150 g, chopped

¼ cup date syrup or 60 ml

Preparation

Combine NESTLÉ® Sweetened Condensed Milk , liquid whipping cream and vanilla powder in a bowl of an electric mixer. Beat until thick and creamy.

Carefully fold in almonds, pistachio and dates.

Pour half the cream mixture into a foil lined 12cm x 23cm loaf pan.

Gently sprinkle with date syrup over the cream then spoon the rest of the cream mixture over.

Cover with cling film and freeze for at least 12 hours until set.

Cut into slices then serve.
