Ingredients

4 tbs (100g) harissa*
1/3 cup (80ml) lemon juice, plus wedges to serve
4 x 180g skinless blue-eye fillets
1 telegraph cucumber, peeled, deseeded, cut into chunks
3 tomatoes, deseeded, cut into chunks
2 cups watercress sprigs
1 small red onion, sliced
1 cup (160g) kalamata olives
100ml olive oil
2 tsp sumac*
1 pita bread round, grilled until crisp

Method

Step 1 Combine harissa and 2 tbs lemon juice in ceramic dish. Add fish, turn to coat, then set aside while you make the fattoush.

Step 2 Place cucumber, tomato, watercress, onion and olives in a bowl. Mix 1/3 cup (80ml) oil, sumac and remaining 2 tbs lemon juice in a small bowl. Season and set aside while you cook the fish.

Step 3 Heat remaining oil in a large non-stick frypan over medium heat. Cook fish for 3-4 minutes each side or until golden and cooked through.

Step 4 Break pita bread into pieces and toss with salad and dressing. Serve the fish on the salad, with lemon wedges.

Notes

* Harissa (a Tunisian chilli paste) and sumac are from selected supermarkets and Middle Eastern shops. Fattoush is a traditional Middle Eastern salad with crisp pita bread.

Lebanese Lentil Salad Recipe

Ingredients:

Servings: 4-6

1 cup lentils
4 cups water
3/4 cup red pepper, chopped
1/3 cup red onion, chopped
2 tablespoons fresh mint, chopped
6 tablespoons olive oil
6 tablespoons lemon juice
2 cloves garlic, minced
6 ounces feta cheese, crumbled

Directions:

1 In saucepan, bring lentils and water to a boil, cook 30 minutes until tender, drain.
2 Add pepper, onion and mint.
3 Refrigerate at least 30 minutes or until ready to serve.
4 Just before serving, add oil, lemon juice, garlic and feta.
5 toss and serve

Ingredients

Tabouli

1/3 cup cracked wheat
2/3 cup boiling water
1 bunch flat-leaf parsley, chopped
Handful roughly chopped fresh mint
200g punnet grape or cherry tomatoes, quartered lengthwise
1 Lebanese cucumber, quartered and sliced
3 green onions (shallots), sliced
2 tbsp lemon juice
2 tbsp extra virgin olive oil
Salt flakes and cracked black pepper

Koftas

600g lamb mince
2 cloves garlic, chopped finely
1 tsp ground cumin
1½ tsp ground coriander
1 tbsp roughly chopped mint
2 green onions (shallots), sliced
1/3 cup breadcrumbs
¼ cup soda water
1½ tsp salt flakes
½ tsp ground white pepper
1½ tbsp olive oil
Pita bread and tzatziki, to serve

Equipment

Kettle
Small bowl
Cling wrap
2 medium bowls
Baking tray
Frying pan
Tongs
Sieve

Preparation

1. Make tabouli Place cracked wheat and boiling water in small bowl; cover with cling wrap. Set aside for 30 mins. In other bowl toss parsley, mint, tomatoes, cucumber, green onions, lemon juice, oil, salt and pepper; cover and refrigerate until cracked wheat is ready.

2. Make koftas Meanwhile, combine mince, garlic, ground cumin and coriander, mint, green onions, breadcrumbs, soda water and salt and pepper in bowl. Roll into 12 patties and place on baking tray.

3. Heat oil in frying pan over medium-high heat. Cook koftas for 3 to 4 mins each side or until cooked through.

4. Drain cracked wheat and toss through salad. Serve with koftas, pita bread and tzatziki.You can make the uncooked koftas a day ahead and store in the fridge. Use store-bought tabouli if you prefer.

Ingredients


3/4 cup (135g) burghul
500g lamb mince
1 brown onion, coarsely grated
1 tsp ground allspice
1 tsp ground cumin
1 tsp ground cinnamon
1/2 tsp ground white pepper
2 tbs toasted pine nuts
Vegetable oil, to deep-fry
Natural yoghurt, to serve

Mint and broad bean salad

2 cups (300g) fresh or frozen broad beans, peeled
2 ripe tomatoes, seeded, finely chopped
1 red onion, thinly sliced
1 bunch mint, leaves picked
1 tbs olive oil
1/2 tsp ground sumac

Method


Place the burghul in a large bowl and cover with cold water. Set aside for 30 minutes to soak.


Meanwhile, combine the lamb, onion, allspice, cumin, cinnamon and pepper in a large bowl. Season well with salt. Transfer one-sixth of the mixture to a small bowl and add the pine nuts. Stir to combine.

Strain the burghul through a fine sieve. Use your hands to squeeze to remove excess water. Add the burghul to the remaining lamb mixture and stir to combine.

Heat a little of the oil in a medium frying pan over high heat. Add the pine nut mixture and cook, stirring with a wooden spoon to break up any lumps, for 5 minutes or until cooked through. Remove from heat and set aside for 10 minutes to cool.

Divide the burghul mixture into 16 even portions. With wet hands, shape a portion into a cup shape. Spoon one-sixteenth of the pine nut mixture into the centre. Shape the burghul mixture around to enclose filling. Shape into an elongated egg shape with pointed ends. Place on a large plate. Repeat with remaining burghul mixture and pine nut mixture. Cover with plastic wrap and place in the fridge for 30 minutes to rest.

Add enough oil to a large saucepan to reach a depth of 6cm. Heat to 180°C (to test when oil is ready, a cube of bread turns golden brown in 15 seconds). Add one-quarter of the kibbeh to the oil and cook for 5 minutes or until golden brown and cooked through. Use a slotted spoon to transfer to a plate lined with paper towel. Repeat in 3 more batches with remaining kibbeh.

To make the mint and broad bean salad, cook broad beans in a saucepan of boiling water for 1-2 minutes. Refresh under cold running water. Drain well. Place in a large bowl with tomato, onion and mint. Drizzle with oil; gently toss to combine. Sprinkle with sumac.

Divide the broad bean salad among serving plates. Top with kibbeh and serve immediately with yoghurt, if desired.

Notes

Allow 30 minutes soaking, 10 minutes cooling and 30 minutes resting time.

This hearty Middle Eastern grain salad combines bulgur wheat with cooked eggplant, bell pepper, onion, tomato, garlic, mint and lemon juice. 

Ingredients

1-1/2 cups  bulgur wheat (cracked wheat)
2 cups  boiling water
1-1/2 cups  finely chopped eggplant
1/2 cup  chopped red peppers
1/2 cup  finely chopped onions
2 cloves  garlic, minced
1 Tbsp.  olive oil
1 large  tomato, chopped
1 cup  finely chopped fresh parsley
1/3 cup  finely chopped fresh mint
1/2 cup  lemon juice
1/2 tsp.  ground black pepper
Lettuce leaves
WHEAT THINS Original Snacks

Directions

MIX bulgur and boiling water in large bowl; let stand 30 min. Drain well.

COOK eggplant, red peppers, onions and garlic in hot oil in large skillet on medium heat 8 to 10 min. or until vegetables are tender, stirring frequently. Remove from heat; place in large bowl. Stir in bulgur and next 5 ingredients.

REFRIGERATE 2 hours. Serve on lettuce-covered plates with WHEAT THINS.

Moroccan Bean Salad Recipe

Ingredients

1/2 cup  KRAFT Zesty Italian Dressing
1/2 tsp.  ground cumin
1/2 tsp.  ground cinnamon
2 cans  (15 oz. each) chickpeas (garbanzo beans), drained, rinsed
1/2 cup  raisins
1/2 cup  PLANTERS Slivered Almonds

Directions

BEAT dressing, cumin and cinnamon in medium bowl with wire whisk until well blended.

ADD beans and raisins; mix lightly. Sprinkle with almonds; cover.

REFRIGERATE at least 30 min. before serving.

Best of Season
Fresh fava beans make a wonderful substitute for the garbanzo beans in this recipe, especially if you buy them in late spring or early summer when they are in season. Cook 3 cups shelled fava beans in boiling salted water for 2 to 3 min. Drain, cool and peel outer skins.

Baharat beef kebabs with chickpea tabouli recipe

Ingredients (serves 4)

2 tsp smoked paprika
2 tsp ground cumin
1 tsp freshly ground black pepper
1 tsp ground coriander
1/4 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground cardamom
1/4 tsp ground cloves
1.2kg beef scotch fillet, cut into 2cm pieces
Olive oil spray
2 cups store-bought tabouli
400gcan chickpeas, rinsed, drained
Lebanese bread, to serve
Eggplant dip, to serve

Method

Combine the paprika, cumin, pepper, coriander, cinnamon, nutmeg, cardamom and cloves in a large bowl. Add beef and toss to coat. Thread beef on to 12 skewers. Preheat grill on medium-high. Spray skewers with oil. Cook for 3-4 minutes each side for medium or until cooked to your liking.

Combine tabouli and chickpeas in a bowl. Divide the bread, skewers and chickpea tabouli among serving plates. Serve with eggplant dip.

Notes

Tip: Stop bamboo skewers from burning by first soaking them in cold water for 20 minutes. Skewers can be made up to 24 hours ahead and stored in the fridge, which will help the flavours develop.

Fattoush with sumac chicken recipe

Ingredients (serves 4)

2 garlic cloves, crushed
2 tbsp olive oil
2 tbsp sumac
1 wholemeal lebanese bread
2 chicken breast fillets
4 radishes, trimmed, thinly sliced
3 tomatoes, cut into wedges
2 lebanese cucumbers, halved lengthways, thinly sliced diagonally
1 red onion, halved, cut into thin wedges
1 large red capsicum, seeded, coarsely chopped
1 cup loosely packed fresh mint leaves
1 cup loosely packed fresh continental parsley leaves
2 tbsp fresh lemon juice
2 tbsp extra virgin olive oil

Method

Preheat oven to 200C. Combine the garlic, olive oil and sumac in a bowl. Brush both sides of the bread with half the oil mixture. Place on a baking tray.

Bake for 10 minutes or until crisp and golden, then set aside to cool.

Meanwhile, brush both sides of the chicken with the remaining oil mixture. Heat a large frypan over medium heat.

Cook the chicken for 4-5 minutes each side or until cooked through. Transfer to a plate and set aside for 5 minutes to rest.

Combine the radish, tomato, cucumber, onion, capsicum, mint and parsley in a large bowl. Break the bread into pieces. Thinly slice the chicken.

Add the bread and chicken to the tomato mixture and gently toss to combine. Whisk the lemon juice and extra-virgin olive oil in a jug to combine. Pour the dressing over the fattoush to serve.

Notes

Tip:
This dish is best with ripe tomatoes. To ripen tomatoes, place them in a bowl at room temperature out of direct sunlight. Once ripe, store them in the fridge. If you're short on time, buy pita crisps and a barbecue chicken to create a no-cook meal.

Ingredients (serves 4)

60ml (1/4 cup) olive oil
8 (about 600g) Lebanese eggplants, halved lengthways
2 ripe tomatoes, coarsely chopped
3/4 cup fresh coriander leaves
1 x 80g pkt Sunbeam pistachio kernels, coarsely chopped
130g (1/2 cup) Greek-style yoghurt
60ml (1/4 cup) fresh lemon juice
1/2 garlic clove, crushed
Lebanese bread, to serve

Method

Heat half the oil in a large non-stick frying pan over medium heat. Add half the eggplant and cook for 3-4 minutes each side or until golden brown and tender. Transfer to a plate. Repeat with the remaining oil and eggplant.

Meanwhile, combine the tomato, coriander and pistachio in a medium bowl. Combine the yoghurt, lemon juice and garlic in a small bowl. Season with salt and pepper.

Divide the eggplant among serving plates. Top with the tomato mixture and yoghurt dressing. Serve with the Lebanese bread.

Notes

Herbed zucchini & tomato salad: Replace the eggplant with zucchini in step 1. Replace the coriander with fresh mint leaves and the pistachio kernels with toasted pine nuts in step 2. Serve with sliced ciabatta (crusty Italian bread).

Recipe facts:

Ingredients

500g new potatoes, sliced finely on a mandolin
50ml olive oil
1 red chilli pepper, de-seeded and finely sliced
1 large onion, finely sliced
1 clove garlic, minced
1tsp paprika
½tsp ground cumin
pinch of nutmeg
sprigs of coriander, to garnish

Heat the olive oil in a large frying pan over a medium heat and sweat the onion, chilli pepper and garlic for 6-7 minutes, stirring occasionally. Add the ground cumin, nutmeg and half of the paprika with a little seasoning and cook for a further minute. Add the sliced potato, mix once carefully, then reduce the heat and cover with a lid.

Cook for 4-5 minutes until the potato is just soft. Adjust the seasoning to taste, then spoon into a serving dish. Sprinkle the remaining paprika on top and garnish with a sprig of coriander leaves before serving.

Moroccan Chicken Salad Recipe

Leftover chicken and rice come together in this flavorful main dish salad. Serve over baby spinach.

4 servings, about 1 1/3 cups each

Ingredients

2 cups cooked rice
2 cups shredded cooked chicken
2 cups shredded carrots
1/4 cup sliced scallions
1/4 cup chopped Kalamata olives
1/4 cup reduced-sodium chicken broth
1/3 cup orange juice
2 tablespoons lemon juice
2 tablespoons chopped fresh mint
2 tablespoons chopped fresh cilantro
2 teaspoons extra-virgin olive oil
1/2 teaspoon ground cinnamon
1/8 teaspoon cayenne pepper
Salt & freshly ground pepper, to taste

Preparation

Combine rice, chicken, carrots, scallions and olives in a large bowl. Whisk together gravy (or broth), orange juice, lemon juice, mint, cilantro, oil, cinnamon, cayenne and salt and pepper to taste in another bowl. Toss dressing with rice mixture.

Lamb, feta and lentil fattoush recipe

Cook up a healthy Lebanese salad of lamb and lentils, combined with feta and crisped pita bread.

Ingredients (serves 4)

300g (1 1/2 cups) French-style green lentils (see top tips)
125ml (1/2 cup) extra virgin olive oil, plus extra, to drizzle
11/2 lemons, juiced, plus extra cheeks, to serve
2 tsp sumac (see Top tips)
3 lamb backstraps, trimmed
2 Lebanese pita breads, split in half
2 small Lebanese cucumbers
200g grape tomatoes, halved
1 bunch red radishes, trimmed, cut into wedges
1/3 cup torn flat-leaf parsley
2 tbs chopped mint leaves
2 tbs chopped coriander leaves
3 spring onions, finely chopped
100g feta, crumbled

Method

Place lentils in a pan, cover with 8cm cold water and bring to the boil over medium heat. Cook for 30 minutes or until tender. Drain. Place in a large bowl.

Meanwhile, to make dressing, whisk oil, lemon juice, sumac, 1 tsp salt and 1/2 tsp freshly ground black pepper in a small bowl. Reserve 2 tbs for lamb.

Toss remaining dressing with warm lentils. Set aside. Preheat a chargrill pan over medium heat. Toss lamb with reserved dressing in a bowl. Chargrill for 3 minutes each side for medium-rare or until cooked to your liking. Rest for 5 minutes. Drizzle pitas with a little extra oil and season with salt. Cook for 45 seconds each side or until toasted.

Halve cucumbers lengthwise. Using a spoon, scoop out seeds and discard. Cut into 1cm pieces, then add to lentils with tomatoes, radishes, herbs and onions. Break bread into 2cm pieces, add to salad and toss to combine.

Cut lamb into thin slices on the diagonal, then layer on a platter with salad. Scatter with feta and serve with lemon cheeks.

Notes
Top tips: French-style green lentils are available from selected supermarkets and delis.

Sumac is a reddish-brown, sour ground Middle Eastern spice from supermarkets.

Middle Eastern Platter Recipe

Ingredients

3 tablespoons freshly squeezed lemon juice (from 1 or 2 lemons)
2 tablespoons olive oil
4 plum tomatoes, seeded and diced
1 English cucumber (about 1 pound), seeded and diced
1 cup coarsely chopped fresh parsley
1 small red onion, diced
Coarse salt and ground pepper
1 container (8 ounces) store-bought hummus
1/2 teaspoon paprika
8 ounces feta cheese
1 cup black olives, such as kalamata, pitted
4 pita breads (6-inch)

Directions

Prep: In a small container, combine lemon juice and 1 tablespoon olive oil. In a medium container, combine tomatoes, cucumber, and parsley; place onion in a separate plastic bag.

Serve: Add onion and dressing to vegetables. Season with salt and pepper, and toss to combine. Serve with hummus (sprinkled with paprika and remaining olive oil), feta (thickly sliced), olives, and pita.

Spring green fattoush - How to make spring green fattoush

Savour all the flavours of spring in every bite with this elegant, seasonal salad

Easy
Serves 6-8 as a starter or side
Prep 40 mins

Ingredients

500g broad beans , frozen or fresh
1 cucumber
3 wholemeal pitta breads
zest and juice 1 lemon
4 tbsp olive oil
1 tsp caster sugar
20g bunch mint , smaller leaves picked, rest very roughly chopped
20g bunch flat-leaf parsley , very roughly chopped
small bunch chives , snipped
170g feta cheese , crumbled

Method

First get all the ingredients ready. Bring a pan of water to the boil, add the beans and boil for 2-3 mins until just tender. Drain, rinse with cold water to cool, then drain again. Pod the beans from their skins into a large mixing bowl, discard the skins. Halve cucumber lengthways, scrap out the seeds using a teaspoon, then slice into half-moons and throw in with the beans. Split the pittas so you have 6 thin circles of bread, then toast.

Whisk together lemon zest, juice, olive oil and sugar with plenty of seasoning. Pour over the beans and cucumber, add all the herbs and toss together. Tear the toasted pitta into pieces and add this to the salad with the crumbled feta. Toss together very gently - hands are best - then pile onto a platter to serve.

Lamb couscous burgers with hummus and couscous tabouli recipe

Juicy Middle Eastern lamb and couscous burgers taste terrific wrapped in a soft pide with eggplant and a dollop of hummus and tabouli.
 
Cooking Time 25 minutes
 
Ingredients (serves 4)

1 tbs olive oil
1 red onion, halved, finely chopped
1 tbs Middle Eastern spice (McCormick brand)
250ml (1 cup) cold water
190g (1 cup) couscous
500g lamb mince
1 egg, lightly whisked
Salt & freshly ground black pepper
1 x 250g punnet cherry tomatoes, halved
1 cup loosely packed coarsely chopped fresh mint
1/2 cup loosely packed coarsely chopped fresh continental parsley
1 tbs fresh lemon juice
1 (about 40cm long) Turkish pide, cut crossways into 4 equal portions, each portion split
Mixed lettuce leaves, to serve
200g bought marinated chargrilled eggplant, drained on paper towel, to serve
Bought hummus, to serve

Method

Heat oil in a frying pan over medium heat. Add the onion and cook, stirring, for 2 minutes or until soft. Add the spice mix and cook, stirring, for 1 minute or until fragrant. Add the water and bring to the boil. Remove from heat. Add the couscous and stir with a fork to combine. Cover and set aside for 2 minutes or until the liquid is absorbed. Stir with a fork to separate the grains. Set aside for 2 minutes to cool.

Combine one-third of the couscous with the mince and egg in a bowl. Season with salt and pepper. Divide mixture into 4 portions and shape into 10cm patties.

Heat a large non-stick frying pan over medium-high heat. Add the patties and cook for 3 minutes each side or until brown and cooked through. Transfer to a plate and cover with foil to keep warm.

Meanwhile, combine the remaining couscous, tomato, mint, parsley and lemon juice in a medium bowl. Taste and season with salt and pepper.

Toast pide. Place 1 pide half, cut-side up, on each serving plate. Top with lettuce, eggplant and patties. Top with a dollop of hummus and serve with remaining pide and tabouli.

Couscous salad with avocado & prawns recipe

Ingredients (serves 4)

190g (1 cup) couscous
125ml (1/2 cup) salt-reduced chicken stock
125ml (1/2 cup) water
2 tsp olive oil
2 small Lebanese cucumbers, ends trimmed, finely chopped
2 carrots, peeled, finely chopped
1 red capsicum, halved, deseeded, finely chopped
1 small avocado, halved, stone removed, peeled, thinly sliced
400g peeled cooked prawns, deveined
1/3 cup shredded fresh mint

Dressing
1 tbs finely grated lemon rind
60ml (1/4 cup) fresh lemon juice
2 tbs olive oil

Method

1. Place the couscous in a heatproof bowl. Place the stock and water in a saucepan over medium heat. Bring to the boil. Stir in the oil. Pour the stock mixture over the couscous. Stir to combine. Set aside, covered, for 3 minutes or until the liquid is absorbed. Use a fork to separate grains. Set aside for 5 minutes to cool.
  
2. Meanwhile, to make the dressing, whisk together the lemon rind, lemon juice and oil in a small bowl. Season with salt and pepper.
  
3. Add the cucumber, carrot, capsicum, avocado, prawns and mint to the couscous, and toss to combine.
  
4. Add the dressing and toss to combine. Divide among serving bowls and serve.

Notes
Storage tip: Store capsicum in the crisper or a sealed plastic bag in the fridge for up to one week.

Variations

Pasta salad with salmon & balsamic dressing: Omit the couscous, stock, water, oil and prawns. Omit the lemon rind and lemon juice from the dressing. Reduce the oil in the dressing to 11/2 tbs olive oil. Finely chop the avocado. In step 1, cook 250g dried spiral pasta in a large saucepan of boiling water following packet directions or until al dente. Drain. Set aside to cool. Add 1 1/2 tbs balsamic vinegar to the oil in step 2. Add 1 x 415g can red salmon, drained, skin and bones removed, flaked, to the pasta mixture in step 3. In step 4, add dressing to the salad. Toss to combine. Divide among serving bowls and serve.

Chicken & vegetable noodle salad:
Omit the couscous, stock, water, oil, prawns and mint. Omit the dressing. Peel the cucumber and carrots into ribbons. Thinly slice the capsicum. Cook 300g fresh egg noodles in a saucepan of boiling water for 1-2 minutes or until tender. Rinse under cold running water. Drain. Omit step 1. In step 2, whisk together 1 1/2 tbs sweet chilli sauce, 1 1/2 tbs fresh lime juice, 1 1/2 tbs soy sauce and 1 tbs olive oil. Add 1 bunch coriander, leaves picked, and 200g (2 cups) shredded Woolworths Country Style Roast Chicken to the salad in step 3. In step 4, add the soy sauce mixture to the salad and toss to combine. Divide among serving bowls and serve.

Couscous salad with chickpeas & capsicum: Omit the prawns. Replace the capsicum with 125g (1/2 cup) drained Always Fresh Fire Roasted Marinated Red Pepper Strips (roasted capsicum). Replace the mint with 1/2 cup fresh mint leaves. Add 1 x 400g can chickpeas, rinsed, drained, to the salad in step 3. In step 4, add the dressing to the salad and toss to combine. Divide among serving bowls and serve.

Tabbouleh with Chicken and Red Pepper Recipe

YIELD: 4 servings (serving size: 1 1/4 cups)
COURSE: Salads

Ingredients

1/2 cup uncooked bulgur
1/2 cup boiling water
1 1/2 cups diced plum tomato
3/4 cup shredded cooked chicken breast
3/4 cup minced fresh flat-leaf parsley
1/2 cup finely chopped red bell pepper
1/2 cup diced English cucumber
1/4 cup minced fresh mint
1 1/2 tablespoons fresh lemon juice
1 tablespoon extra-virgin olive oil
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper

Preparation

1. Combine bulgur and 1/2 cup boiling water in a large bowl. Cover and let stand 15 minutes or until the bulgur is tender. Drain well; return bulgur to bowl. Cool.

2. Add tomato and remaining ingredients; toss well.

Middle Eastern Eggplant Salad Recipe

Reminiscent of baba ghanoush, this salad can be served alongside roasted or grilled meats or as a dip with crackers or flatbread.

YIELD: 4 servings (serving size: 1/2 cup)

Ingredients

2 medium red bell peppers
1 medium tomato, peeled and seeded
3 tablespoons no-salt-added tomato paste
2 tablespoons water
1/2 teaspoon salt, divided
Dash of ground red pepper
3 garlic cloves, thinly sliced
1/4 cup olive oil
1 pound eggplant, cut into (1-inch) cubes
1/4 teaspoon freshly ground black pepper

Preparation

1. Preheat broiler.

2. Cut bell peppers in half lengthwise; discard seeds and membranes. Place pepper halves, skin sides up, on a foil-lined baking sheet; flatten with hand. Broil 12 minutes or until blackened. Place in a zip-top plastic bag; seal. Let stand 10 minutes. Peel and chop.

3. Place tomato in a blender; process until smooth. Combine tomato puree, tomato paste, 2 tablespoons water, 1/4 teaspoon salt, ground red pepper, and garlic in a blender; process until smooth.

4. Heat oil in a saucepan over medium heat. Add eggplant; cook 30 minutes or until tender, stirring frequently. Stir in bell pepper and tomato mixture. Cook 5 minutes. Stir in remaining 1/4 teaspoon salt and black pepper.

Chickpea and Spinach Salad with Cumin Dressing and Yogurt Sauce Recipe

Ingredients

2 (15-ounce) cans chickpeas, drained and rinsed
1/4 cup chopped flat-leaf parsley
1/2 cup chopped red onion
1/4 cup olive oil
3 tablespoons lemon juice
1/2 teaspoon lemon zest
1 1/2 teaspoons ground cumin
1/8 teaspoon cayenne pepper
Salt and pepper
4 cups baby spinach leaves
Yogurt with Orange Essence, recipe below, optional
2 tablespoons coarsely chopped fresh mint leaves, optional

Directions

In a medium bowl combine the chickpeas, parsley and onion. In a small bowl whisk together the olive oil, lemon juice, zest, cumin, cayenne pepper, salt and pepper. Pour the dressing over the chickpea mixture and toss to combine. Serve the chickpea salad over a bed of spinach leaves. Top with the yogurt sauce and a sprinkle of mint, if using.

Yogurt with Orange Essence:

1/3 cup lowfat plain yogurt
1/4 teaspoon orange zest
2 tablespoons orange juice
1/2 teaspoon honey

In a small bowl, stir together the yogurt, orange zest, orange juice and honey.

Yield: about 1/2 cup
